STEAM.Plus technology is standard in the ChefLux, BakerLux, LineMiss and LineMicro ovens.
What is it for
In many culinary applications the proper amount of humidity within the cooking process provides intense colors, enhanced flavors and unchanged structures. A moist environment during the cooking process also allows the rapid transfer of the heat to the food, reducing cooking times and product shrinkage.
In bakery and pastry, the introduction of humidity in the chamber in the first minutes of the baking process of leavened products promotes the internal structure development and the browning of the external surface.
How STEAM.Plus works
The STEAM.Plus technology combines the high-speed rotation fans with the injection of water on the fan blades through a single dedicated tube that supplies all the fans present in the cooking chamber.
